Founded in 1677, Yamamoto Honke Brewery is a prestigious Kyoto Fushimi sake brewery with a 350-year history, passing down brewing techniques from the Edo period through generations. The brewery is located next to "Shiragikusui," one of Fushimi's seven famous waters, and uses mineral-rich soft water to brew its mellow and elegant classic "Nadejo" (ladies' sake). It combines traditional craftsmanship with modern technology, showcasing the science and dedication of sake brewing through processes such as rice steaming, koji making, and temperature-controlled fermentation.
